Specific features | Traditional method. The stages of the traditional method include bottling the filtered wine with some sugar to allow a second alcoholic fermentation to happen in the bottle (when the wine becomes sparkling), riddling the bottle on a rack called a “pupitre”, disgorging the deposit in the bottleneck and finally adding the "liqueur d’expédition” that will define the sweetness level. The bottle is then corked and packaged. |
